When to stop processing?

I wonder if more people have the same 'problem'. I have difficulty to determine when to stop processing and call it 'done'. The beginning of the workflow is quite straightforward, but when i arrive at the 'enhancing detail and color part' i get into the rabbithole. Some more sharpening, some HDRmultiscale transform to enhance structures, etc.

I know it's all a matter of taste. And when the steps you take stop making the picture better you should take a step back. Maybe -imaging in a Bortle 9 backyard- i should take it with more ease, but being the perfectionist i am, i want to squeeze anything out of the image. And Hearing Adam sometimes state he is processing images for a long time i tend to do the same. How do other peaople know when to stop?

As an example a recent Bode-galaxy image and a Monkey Head. The Bode one looks a bit overcooked to me...
